Meet Nina—Sales Executive by Day, Bakery Entrepreneur by Night

I met Nina in the Summer of 2021 for a face-to-face interview at Mudleaf Coffee in Plano, TX. In hindsight, that day would change my life any many others' forever. Just three years into the business, I was looking for a new coffee catering sales coordinator and was referred to Nina by a close industry friend. I don't remember much from that interview except for this—Nina was ready. No questions—just ready to get to work. She was fully committed before I even decided if I liked her—and for that reason, I hired her.

Five Years and Three Promotions Later

Since stepping into leadership of Nightowl’s sales division, Nina has led a masterful 4x in annual revenue while helping expand Nightowl into one of the most recognizable experiential coffee catering brands in the world. From local coffee catering and luxury retail activations to nationwide espresso catering tours and sponsored barista stations at the greatest events in sports, Nina has helped build the relationships and hospitality-first systems that continue fueling Nightowl’s growth.

But what makes Nina especially impressive is that while helping scale Nightowl Coffee, she’s simultaneously built an incredible business of her own. Nina's story is one of relentless grit and a spirit of always striving for more—and it's my honor to share it.

The Story Behind Baked Cape Coral 🥖

Nina’s entrepreneurial journey started back in 2015 making cake pops before evolving into meal prep, a nationwide cookie company, and eventually handcrafted sourdough. Today, Baked Cape Coral has become a local favorite in Cape Coral, Florida—with sellout weekends, expanding bake stands, and lines forming before opening.

The same energy that makes Nina exceptional in experiential hospitality and coffee catering is what makes Baked work so well: consistency, creativity, hospitality, and genuine connection with people. Whether she’s leading a major Fortune 500 client relationship for Nightowl or serving fresh sourdough to repeat customers in her driveway on a Saturday morning, Nina brings the same level of excellence, determination, and grit into everything she builds.

Why I'm Proud of Nina

At Nightowl Coffee, we believe the best teams are filled with people ambitious enough to build things of their own—whether a family, Bible study, a business, or a passionate hobby. Watching Nina help grow Nightowl while simultaneously creating a thriving business has been incredible to witness. She’s helped shape the growth of our coffee catering services, experiential activations, espresso catering programs, and guest experience strategy across thousands of events—and somehow still found time to create one of Cape Coral’s favorite local bakeries.

I think I'm even more impressed in knowing how Nina does all this. Because not many other than myself know the battles she's faced, her true surrender and affection for Jesus, her passion for her family, and her love for her husband. Nina certainly hasn't had an easy life, but I don't know many that have had a richer life.
