Meet Karen Sanchez: The Heart Behind Saint Coffee ☕️
I first met Karen when she was a barista at one of my favorite coffee shops in Dallas: Native Coffee Co. A year later, she joined our team Nightowl Coffee as an Event Barista and our Staffing Manager. But before we get there, you should know this about Karen first: she loves the Lord with all her heart—and it shows.
When I think of joy from the Lord, I think of Karen. She brings an unbreakable smile, a servant heart, and a steady presence into every room, every event, and every circumstance. Since joining Nightowl, our team has become better—and that says everything about the kind of person she is.
Karen is also the founder of Saint Coffee DFW, a growing DFW coffee catering brand bringing intentional coffee experiences and genuine hospitality to events across Dallas–Fort Worth. But here's what's cool. Karen is building Saint Coffee while investing deeply in Nightowl’s people. She is pursuing her own vision without treating another brand’s opportunity as a threat. That humility, hard work, and selflessness are exactly why we are so proud to call her part of the Caffeine Team.
From Engineering to Espresso
Before launching Saint Coffee, Karen worked in engineering. The career was stable, but she knew she wanted a life more connected to people, purpose, and hospitality. Six months before turning 30, she decided to change course.
Karen launched Saint Coffee on her 30th birthday. Just seven months later, she left engineering behind to pursue coffee and hospitality full time. That is not just a career change. That is courage, faith, and serious grit.
Today, Saint Coffee is creating memorable coffee cart service for weddings, corporate events, private celebrations, retail activations, and branded guest experiences throughout DFW. Karen has built her brand around excellent coffee, meaningful connection, and making every guest feel seen. One of my favorite parts of the coffee catering industry is seeing operators choose community over paranoia and collaboration over insecurity.
Karen is growing Saint Coffee while helping Nightowl grow stronger. We are separate brands, but we believe the same thing: coffee can create connection, elevate an environment, and transform an ordinary event into an unforgettable experience.
